1 lemon rind + 1/4 lemon juice

Preheat oven 320°F (160°C)

Beat the butter & powdered sugar together till smooth.

Add vanilla (for vanilla cookies) or lemon rind (for a hint of lemon).

Add salt & cornflour & mix together.

Beat the flour and knead into a dough.

On a flour surface, roll out till 1/4 inch thick.

Use your favorite cookie cutters to cut into shapes.

Place on to a cookie sheet & add for 12-15mins, or till the edges start turning a light brown.

Sprinkle lightly with granulated sugar while still warm.
